Exploring Indonesian Cacao: A Tasting Session with Zoi

Three origins, three stories, and a deeper appreciation of Indonesian chocolate.

Every cacao origin has a story to tell. Sometimes, the best way to discover it is through a closer look and a thoughtful taste.

At Terve Chocolate, we welcomed Zoi, Lead Advisor at Zoto, for a chocolate tasting session exploring cacao from three Indonesian regions: Lampung, Aceh, and Cilacap.

The session offered an opportunity to explore the individuality of Indonesian cacao and reflect on how origin, post-harvest practices, and chocolate-making processes contribute to the final tasting experience.

Three Origins, One Shared Curiosity

Indonesia’s cacao landscape is diverse, shaped by different growing environments, farming practices, and post-harvest approaches. These factors can influence the flavour potential of cacao long before it becomes chocolate.

During the session, we tasted chocolates made from cacao sourced from Lampung, Aceh, and Cilacap, paying attention to the sensory experience each one offered.

From aroma and flavour to acidity, texture, and finish, tasting provides a way to observe the nuances that make each chocolate distinctive.

Rather than simply asking which chocolate tastes best, the process invites a deeper question: what makes each one different?

Looking Beyond the Chocolate Bar

A chocolate’s character is not determined by origin alone. Fermentation and drying influence the development of flavour precursors, while roasting, refining, and conching further shape the final result.

This is why understanding cacao requires looking beyond the finished chocolate.

By examining the tasting experience alongside the processes behind it, we can develop a better appreciation of the decisions and craftsmanship involved in transforming cacao beans into chocolate.

Continuing the Conversation Around Indonesian Cacao

For Terve Chocolate, sessions like this are part of a continuous learning process. Exploring cacao from different regions encourages us to ask better questions, exchange knowledge, and appreciate the potential of Indonesia’s cacao-producing communities.

Each origin represents more than a geographical point on a map. It represents the people, agricultural practices, and careful processes that contribute to the chocolate we eventually experience.

Our tasting session with Zoi was another opportunity to explore these connections and a reminder that there is always more to discover in Indonesian cacao.
